These Keto Carmels are a really low carb treat for all the family. They are so much like the real thing that no-one will be able to tell them apart. Enjoy!

INGREDIENTS
200 g Keto condensed milk (click LINK for recipe)
250 g Monk fruit/erythritol blend brown sweetener
1/2 cup unsalted butter
1/2 Cup Zero vanilla flavor sugar free syrup
2 Tsp vanilla essence
1 Cups of chopped almonds (optional)
1 Pinch fine Himalayan salt
Note: For Vegan option use Keto condensed milk made with coconut milk and a good quality margarine instead of butter.
METHOD
Line an 8 or 9 inch square pan with foil and lightly grease it with butter or oil. You can also use silicone molds that have been greased with butter.
Over medium heat in a heavy saucepan combine all four ingredients. Stir to combine and melt butter. As the mixture comes to a boil, begin stirring constantly until the temperature on the candy thermometer reaches between 245-250 C. Remove from heat and pour into pan or molds.
Let sit and cool for two hours. Candy can be cut into pieces and wrapped into squares of wax paper for individual treats for gift giving or kept in a plastic storage container and kept refrigerated.
STORAGE
If you have not wrapped the caramels in wax paper, store them in an airtight container between sheets of waxed paper. Store at room temperature one to two weeks. You can refrigerate and keep them for 4 weeks and over.
